Recipe: Heart-Shaped Mini Berliner

You have no idea how much I love Berlin. Oh, actually, you have already had a chance to see why this city is so special to me.

But that is not why I am posting this recipe today. I have been using this recipe for Berliner (Though no one calls them like that in Berlin. There they are, strangely, called Pfannkuchen) for years and they are a success every time.

Now I added a special twist using a cute small heart-shaped biscuit cutter to make them extra sweet:)

Enjoy the recipe:)

You will need the following ingredients:

For the dough
  • 200 ml warm (not hot!) milk
  • 30 g yeast (dry or fresh)
  • 50 g sugar
  • 500 g flavor
  • 2 eggs
  • 50 g melted butter
  • a pinch of salt

For the filling
  • any jam or marmalade you like (or simply have at hand)
  • 1 egg yolk

For the sweet finish
  • Granulated white sugar

Here is how it is done:
  • Mix the milk, sugar and yeast and leave aside for 5 minutes to activate the yeast.
  • Mix the eggs, melted butter and salt. Add the mixture and the yeast to the flour and mix everything together (I always use my hands). Add additional flour if needed.
  • Form a ball and transfer it to a bowl lightly coated with flour. The bowl should be large enough to let the dough double in size. Cover the bowl and let it rest for about one hour.
  • When the dough is ready, turn it into a floured surface and roll it until it`s about 1 cm thick. Cut out the heart shapes with a biscuit cutter. You will need two hearts for one berliner.
  • Spread the egg yolk with a kitchen brush over the edges of one heart, put one spoon of marmalade on it and cover it with the other heart. Now press the edges gently and then cut it again with the heart shaped biscuit cutter (to make the edges look nice and clear).

  • Fill a large pot with oil about 5 cm deep and heat it over medium heat. When it is warm enough carefully drop the Berliner one by one in the oil and let it fry on both sides until golden brown.
  • Once the Berliner are done, place them on a plate lined with paper towels. While the they are still warmish, toss them in sugar. Yummy! And so beautifulJ
