Recipe: Mini Bruschetta in No Time

We could eat bruschetta every day anytime, as a side dish, main dish, doesn't matter:) We also love to make bruschetta when we have a lot of  friends coming over.

There are of course thousands of recipes out there. We would like to share with you the recipe we use most of the time. It is pretty basic, fast and yummy:)

1. The bread
We like to slice a baguette into approximately 2 cm thick slices and spread each slice with a teaspoon of extra virgin olive oil.

2. The topping
Cherry tomatoes and mozzarella are a must.Sometimes we add other ingredients such as fresh pepper or, like in the picture below, mushrooms. We sprinkle salt, dry basil and an extra little bit of extra virgin olive oil over each slice.

3. The baking

We put the bruschetta on a sheet of baking paper and bake it in the preheated oven at 200 degrees C for around 15 minutes.

4. The final touch
Bruschette taste the best if you eat them with a leaf of fresh basil on top. We also love to top the warm bruschette with slices of smoked salmon.

As you can see, it is so simple you can hardly even call it a "recipe". We hope you'll give it a try.

Love,
Emina and Nerma
